Matteo Zamboni is the Chef and Owner of Zambo Restaurant. Why Zambo? Zambo is the nickname that his friends use to call him by.
Inspired by Italian dishes, Matteo creatively re-imagines these in a modern way with presentation, texture, flavour and a twist of native Australian ingredients.
The dishes at the restaurant reflect Matteo’s Italian heritage, his exploration of Australian coastal and bush food as well as his experience of working in some of the world’s best kitchens including Sydney’s hat-awarded restaurants of Ormeggio at The Spit, Pilu at Freshwater and Quay Restaurant as well as the Michelin-starred RyuGin in Tokyo, Ristorante Cracco in Milan and La Pergola in Rome.
